100 g Half and Half

100 g warm-hot water* (I use it straight out of a kettle)

50 g cold water* (I use it from the tap)

20 g white sugar

10 g honey

7 g yeast (I use active dry, but the og recipes use instant)*

190 g bread flour

160 g whole wheat flour (stone ground)

7 g kosher salt

20 g skim/nonfat milk powder

25 g unsalted butter, softened or room temp

neutral oil (for greasing bowl before proofing dough)

butter for greasing baking tin

egg or milk wash (technically optional but I would never skip this)

simple syrup (1 tablespoon white suger + 1 tablespoon water, optional)
